Cheesy loaded fries


  • 600g (150g/person) Lutosa Cajun fries
  • 2 dl full cream
  • 75 gr grated Emmental
  • 75 gr grated Parmesan
  • 75 gr Danish blue
  • 1 chilli pepper
  • 1 red onion & handful of grilled pine nuts


  1. Heat the deep fryer to 175 degrees.
  2. Bring the cream to the boil and let the different cheeses melt in the cream, season with pepper.
  3. Salt will not be necessary as there is enough salt in the cheese.
  4. Peel and chop the red onion.
  5. Remove the seeds from the chilli and cut it into thin slices.
  6. Fry the fries for 3 min30 and drain well.
  7. Serve the fries in a sharing bowl, top with the cheese sauce and finish with the shredded red onion, the chopped chili pepper and the pine nuts.
  8. To give it a fresh touch, you can add some shredded coriander.
